Recipe: Key Lime Pie Bites

MainMan’s birthday was in January and I surprised him in the morning with key lime pie bites. We couldn’t eat them all by ourselves on our post-holiday/New Year’s resolution “diet,” so I insisted he bring some of them to work, like a first grader shipping off to school with birthday cupcakes.

I’ve eaten a lot of key lime pie, but this recipe I discovered on Joyful Healthy Eats, combined with an old friend’s classic recipe from The Blue Point restaurant in Duck, N.C. and finally Martha Stewart’s recipe for graham cracker crust, is the best I’ve ever had. I know, why did I have to make it so complicated? Trust me, it’s worth it. I wanted to make bites. I wanted homemade graham cracker crust. And I wanted the Blue Point filling because I remember loving it when I was in college. The bites had the most perfect texture. To me key lime pie is best when it’s firm, to the point of almost crumbly, as opposed to some restaurants that serve it with a more gooey, custard-like texture. No. Thanks. This may just be the tastiest dessert I have ever made and we’re beyond due for a rebatch.

Key Lime Pie Bites

  • Servings: 8-12 people

For the graham cracker crust:

6 1/2 ounces graham crackers (12 crackers)
finely ground (1 1/2 cups)
2 1/2 ounces (5 tablespoons) unsalted butter
melted 1/4 cup sugar
1/8 teaspoon salt

Pulse graham cracker crumbs, butter, sugar, and salt in a food processor until combined.

And next from the JHE recipe:

Next, add 1 teaspoon of lime zest to graham cracker bowl and mix until completely combined. Place cupcake liners in cupcake tins. Add 2 Tablespoons of the graham cracker mixture and press down in each cupcake liner. Bake for 8 minutes, remove from oven, and let completely cool.

Now onto the filling from the Blue Point recipe:

5 egg yolks, beaten well
1 can Eagle brand sweetened condensed milk
4 ounces key lime juice
1 TBL grated lime zest (2 limes)

Mix all ingredients together well and back to JHE for the final trip to the oven:

Bake for 15 minutes at 350º. Remove from oven and place in refrigerator for at least 30 minutes.. Top with fresh lime zest. Serve.
